Quiche for a Crowd

4-6 slices crisp, cooked bacon, crumbled

1-1/2 cups shredded Monterey Jack cheese

4 eggs

2 cups milk

2 Tbsp dried, minced onion

1-1/2 tsp salt

dash cayenne pepper

1 cup buttermilk baking mix

Sprinkle crumbled bacon and cheese evenly over the bottom of a greased 13 x 9 inch baking pan.  In bowl, beat eggs well.  Beat remaining ingredients into eggs.  Pour egg mixture over bacon and cheese.  Bake at 350 degrees for 30 to 35 minutes or until knife inserted 1 inch from center comes out clean.  Let stand 10 minutes before serving. 

Makes 35-40 appetizers.
